Pani Puri

Pani puri is a type of snack that originated in the Indian subcontinent. It consists of a round or ball-shaped, hollow puri, filled with a mixture of flavored water, tamarind chutney, chili, chaat masala, potato, onion or chickpeas.

Across different Indian state it has different names, viz.

  • Harayana – Paani Patasha

  • Madhya Pradesh – Fulki

  • Uttar Pradesh – Paani ke batashe

  • In Assam – Phuska/Puska

  • In Orrisa – Gup Chup

  • Bihar, Jharkand, Bengal, Chhattisgarh – Phuchka

Following is the mouth watering recipe of Paani Puris:-

Ingredients

For the Puris (Count 40)

  • 1/2 cup semolina (rava/sooji)

  • 1/2 table spoon plain flour (maida)

  • Salt to taste

  • 1/4 cup chilled soda

  • Oil for deep fry

For the pani (4 cups)

  • 3 cups chopped mint leaves (pudina)

  • 2 tbsp chopped coriander (dhania)

  • 1/2 cup tamarind (imli)

  • 1 tbsp roughly chopped ginger (adrak)

  • 1 tbsp roughly chopped green chillies

  • Roasted cumin seeds (jeera) 1 tbsp

  • 2 tbsp black salt

  • Salt to taste

  • 4 tbsp finely chopped jaggery (gur)

Additional Ingredients

  • Boiled potato & chickpeas for filling inside puris

  • 1 cup khajur imli chutney

  • 1 cup boondi, soaked in water for approx 10 mins
